Pumpkin Muffins

Ingredients

  • 1/2 c. butter (or, blech, margarine)
  • 3/4 c. firmly packed brown sugar
  • 1/3 c. molasses
  • 1 egg beaten
  • 1 c. cooked (or canned) pumpkin
  • 1-3/4 c. flour
  • pinch of salt
  • 1 tsp. baking soda
  • 1-1/2 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1/4 c. raisins (or currants)

Cooking Instructions

Preheat to 200F, grease or paper-liner

14 muffin tin holes.
Cream butter until soft.
Add sugar and molasses and beat until light and fluffy.
Add egg and pumpkin and stir until well-blended.

Sift over the flour, salt, baking soda, nutmeg, cinnamon (Margie added
some other spices, too, natch).
Fold in until just blended; don’t overmix.
Fold raisins into the mix until just evenly combined.
Spoon bater into muffin tins, filling 2/3 full.
Bake 12-15 min.
